One of my favorite ways to cook tofu is to pat it good and dry, spray it with olive oil and sprinkle with garlic powder, and bake it until it's turning golden brown. Then serve it with SF BBQ sauce.
Another yummy recipe is to slice it and dip it in beaten egg, dredge it in WW panko, give it a spritzing of olive oil spray, and bake it at 350* for 30 minutes, turning halfway through.
