  • Tonight I made mustard & spinach, eggplant curry and tossed some chick peas in. yum
  • Garlic and Herb Oven Fried Halibut (phase 2)
    salad
    sliced nectarines
  • Ham and cheese omelet with salsa, and a mug of lentil soup
  • Breakfast
    2 cups fruit, LF cheese wedge, 2 hard boiled eggs (no yolk)


    Lunch
    Zucchini and egg plant lasagna


    Dinner
    peppercorn grilled pork loin
    steamed cabbage and kale
  • Dinner tonight was vegetarian italian sausages(the new morningstar ones, and I don't recommend them... boca brats are better) with kraut, shelly beans, and latke, and yes, I had two small ones. bad rikki!
  • Breakfast: Cinnamon omelet
    Lunch: Chickpea Daal
    Dinner: Tofu szechwan stir-fry
    snacks: celery and peanut butter, hard boiled egg, baby carrots
  • Tonight it'll be shiritake noodles (weird things!) with stir fried beef, broccoli and red pepper. I'll go easy on the soy sauce so I won't be whining about water weight tomorrow.
  • mmk, girls. What's the deal with shiritake noodles? I've seen mention of them many times here but haven't seen them. The foodie in me is intrigued and wants to try them.
  • Today's the first day of Lent so it's meatless:

    B: eggbeater & red bell pepper frittata
    L: homemade mini cheese pizza w/side salad
    D: baked haddock & sauteed baby spinach
  • zeff...they are tofu noodles(i think) and I can't find them anywhere!
  • roasted chicken with veggies!
  • I am having zucchini lasagna.
  • Lentil Soup & Salad... I had a BIG diner omelet for lunch, so I want to keep dinner light!
  • I get my shiritake noodles in a Korean grocery store. They are very inexpensive and a little pouch does my for two meals. Very bland though, no need to cook them just rinse them under hot water. No cal. no carbs. no sugar.

  • Today was a bad day - one of the worst this year. My aunt passed away from complications from Type 1 diabetes, working with difficult people and pressures from work. I cried this morning, had a cookie during lunch and a bag of M&Ms this afternoon.

    breakfast: 2 hard boiled eggs, 2 cup fruit cuts, cheese wedge
    lunch: 2 oz pork loin and 2 cups steamed greens
    snack: cheese, cookie, M&Ms
    Dinner: 2 oz pulled pork, pancit (chicken, veggie and mung bean noodle stirfry)
    ~2000 cals
