Celeriac Root - Great sub for mashed potatoes

At the store today I came across a celeriac root. I was reminded that when I lived in Scotland we would mash them up like mashed potatoes and they were DEELISH. They have the the texture of a potato, but are comparably low on carbs because they are actually in the celery family. It has a mild celerly flavor. I thought I would let you folks know they were out there incase you wanted to try them. I'm positive they are fine for Phase 2, and they might even be okay for Phase 1.

I live in a smallish town and I am able to get them a local grocery store. I bet health foods stores would also carry them. I've posted a pic below incase some of you have never seen one. They are ugly, but once peeled are not so bad looking and taste great.

I love the stuff - raw, cooked or in soups. By the way, that's one of the better-looking members of the celeriac family. :lol: I've seen them occasionally in stores around here, mainly in winter months.

My favorite ugly veggie is rutabaga. Yum!

We have them in our Wegman's. They are very ugly, which is why they lost popularity, but they are super yummy! They have a HUGE shelf life, which is great if you just want to keep them on hand. They also make a great potato sub in soups. :)

Chleby -- I never heard of rutabaga until a year ago now it's a favorite!! but yes, totally ugly!

Must find one of each and try some sort of soup. I saw one that used celery root last night of food tv. maybe I can try making it SBD friendly?!?

EDIT: Here is the recipe. Maybe leave out the potato (sub sweet potato for Ph2???) and use light cream???

Just checked celeriac on Fitday and would suggest that it's a Phase II veggie like carrots.

I haven't tried rutabaga ever...I'll have to look that one up. Is that Phase 2 also?

Rutabaga is in the turnip family. It's probably phase 1.

Most root veggies are Phase II. Turnip greens are Phase I.

Thanks gals! I like turnips and haven't had any since I've been on Phase 2...Maybe I'll go for the rutabaga instead! Sound interesting...
