chicken and black bean bake....it's a combination of brown rice, tomatoes, black beans, corn, chicken, chilies and lots of mexican spices. It smells awesome.

zeff the chicken and black bean bake sounds fab! I will have to try that with some veggie chicken for sure! I just bought some trader joes chickenless and beefless strips instead of the morningstar to try! I hope they are good!

Tonight is black bean patty wraps with leftover chili.

We had veggie night -- pinto beans, cauliflower, green beans and mustard greens. Didn't even miss the cornbread on the side. But, if anyone has a cornbread recipe that's on plan, I'd love to have it!

Rikki - as the recipe went, it was just ok. It had a good idea going, though and I'm going to see if I can improve on it. I think the chicken needs some marinating and the rice/bean mixture needs a bit more flavor as well.

We had homemade tomato soup and grilled cheese sandwiches. There should have been spinach in the soup but it looks like I forgot to get that at the grocery store.

SO, barb- how do you make your homemade tomato soup? I for some reason buy probably 4-8 cans of tomatoes a week~ not including sauce, I have decided there is something in them that I crave, just haven't figured out what yet- but rarely buy tomato soup bc of all the preservatives and such- I hear they have a umami(taste recently discovered)and I am pointing to that.... maybe.... who knows...

Rikki - Here is the recipe http://www.3fatchicks.com/forum/showthread.php?t=74721 It's really easy. I just use minced garlic from a jar and frozen chopped onion to make it really easy. I buy a bag of spinach (often baby spinach) and wilt it into the soup after it is cooked. Sometimes I chop the fresh spinach and often I don't. I sometimes top each bowl with a little parmesan too.
