Suggestions for Veggie of the Week?

    So...I know we're all trying to add more veggies into our diets. We're not sure what might be out there...and even if we find a new veggie, we're not sure how to cook it, what it would go well with, and whether anyone in their right mind would even try it!

    To try to help with those issues, I've been writing "Veggie of the Week" threads (periodically...). They're a place to share all that info about veggies with each other. I start off the thread with information on nutritional value, how to cook it, and at least one recipe using that veggie. Then we can all add on to the thread with our experiences, recipes we like, and more! When the week is up, I transfer the thread to the SBD Recipes forum and the recipes to their respective recipe forums.

    I've done several over the years. You can find them all here (they're stickied below the subforums).

    On to the question--what veggies would you like to see in future "Veggie of the Week" threads? I'm open to anything that's SBD-safe in Phase 1 or 2.

  • How about fennel or have we done that. It's also called anise and finnochio!
  • Do mushrooms count as a veggie? Has it been done yet? I have an excellent stuffed mushroom recipe. Tom ate 16 mushrooms! I can't eat that many!
  • I want to be bad and say Sweet Potatoes but I won't. What about Spinach or Asparagus? Those are two that I have just recently grown a taste for and would love to know some more exciting ways of preparing them.
  • Great ideas! Yes, we've done mushrooms, Lisa, but it was recently. You'll find it stuck in the recipe forum.

  • I'm a big fan of brussels sprouts. What about cabbage - it's a really common vegetable that I found incredibly helpful and much more diverse than I realized when I started SBD. It helped me through the first few months (that's what I get for starting when the local produce ran out!). I'd also love to hear about people's experience with celeriac since I've never used it And I second Ruth's request for fennel - that's another one I have just recently discovered.

  • Fennel - I have a very nice recipe and can post it. Its directly from a cookbook so would that be o.k. as long as I credit the author?
    Fennel is a great complement to fish especially salmon.

  • Oops, I missed the celeriac. I use it in soup alot. My SIL is friends with quite a few chefs and one of them has even worked in a restaurant with a Michelin designation. When he recently visited them he made cole slaw for them - he sliced as for coleslaw on the mandoline, added mayo and some horseradish mustard. She said that my 15 old grandson is crazy about it. I haven't tried it.

  • I second brussels sprouts, spinach and asparagus. What about something like squash, or are we looking for something both P1 and P2 friendly?
  • I "third" the brussel sprouts. Yummmm! Squash is a good suggestion, too.
  • How about:

    Sweet Potatoes (I recently discovered I like them!)
    Asparagus
    Tomatoes
    Spinach
    Spaghetti Squash
    Brussel Sprouts
    Broccoli (if it hasn't already been covered)
    Cauliflower (I want other recipes besides "mashed" potatoes)
    Zucchini
    Arugula (I want to try it and would like some recipes)

  • What is celeriac? Sounds like a cross between clelery and something. Thought I knew all the veggies out there but this one is something new to me.

    More Kale recipes would be my choice. I just love the black bean and kale recipe in the recipe section on here.
  • celeriac is celery root. It's very good - almost like a cross between fennel and celery.
