breading for chicken? flaxseed?
 
any ideas for breading chicken is appreciated in advance. i have some ground flaxseed?

What about ground-up oat bran? We usually keep some in the cupboard. Just normal oats that we've put in a coffee-grinder type application on our blender. You could try using it - I don't know if it will work for chicken, but it is very like bread crumbs as far as consistency goes...though better for you :D

Ground nuts work great, too. or WW panko crumbs. Just dip your chicken in beaten egg first, then shake it in a bag with the nuts or panko and bake as usual.

Careful if you use ground flax seed - sear the chicken and finish it in the oven. Flax burns really easily. If you're going to do it entirely on the stovetop - I would do something like ww bread crumbs (easy to make yourself - just whiz some ww bread in the food processor) or ground nuts. I find that ground nuts work better when cut with something. I like ground almonds and parmesan cheese - seasoned to taste.

An easy one (no prep required) is wheat germ. Just keep the jar in the fridge as it can go rancid in a cupboard.

Wegman's makes wholegrain breadcrumbs--I've tried making my own many times, but for some reason, it never works well for me. :o

As an aside, I was thrilled to see that the new McCormick Crusting Blends use WW Panko crumbs, though their panko seems to have sugar. :( There are three flavors, and some don't list the panko first, but here's one for an idea:

Cottage, where have you found WW panko? Other than these mixes, I haven't seen it anywhere! :T

Laurie - believe it or not, it is in our produce section. I can also find it at asian markets if your supermarket doesn't carry it.

Toasted 100% whole wheat bread with garlic, onions, dried cheeses and spices (grinded all up in food processor)...dip the chicken in egg and dip in bread crumbs. Put it in the oven. This is what I do sometimes. I learned it from Giada from the Food Network.

thanks so much girls! i haven't been able to find panko either, but maybe i'll try the asian market. i have looked for ww bread crumbs at the supermarket to no avail.

Yeah, flax works.
I use either light bread crumbs, old cereal mashed up, or nuts.
Or a mix of any.
