  • I've really come to appreciate these threads and haven't seen one in awhile.

    Tonight, we're having chicken and broccoli manicotti with ww flax rolls and cauliflower, grape tomato, onion saute.
  • salmon filet on the BBQ (I'll do an extra for tomorrow's lunch), grilled peppers and onions, tabbouleh
  • Blackened fish, sauteed summer squash squash with garlic and olive oil, fresh sliced garden tomato and roasted new potatoes.
  • We are going to an open house at DS's school tonight (school starts on Tuesday here) and they are having a picnic. Every grade is supposed to bring part of the meal (we have dessert) - I am going to bring fruit but I will also bring a wrap for myself because it is likely that there will not be any other SBD friendly food there. I am going to be totally lazy and pick one up at the store on the way there.
  • Probably leftover night here, we are accumulating a lot of hodge podge in the fridge. We have ground beef for taco salad, turkey meatloaf with cauliflower mashed, and lentil soup all taking up space so the kids and Dh can have their pick. I am choosing meatloaf with a little low carb ketchup for sure.
  • Last night was pork fajitas with whole wheat tortillas, salsa, homemade refried beans, onions, cheese and cabbage mix.

    Tonight I'm making ham, asparagus pasta. It uses fat free evaporated milk with arrowroot to thicken.
  • lunch was just half head of romaine lettuce with 1/2 a tomato, 1/2 avocado, 10 black olives, .5oz shredded cheese, 3/4c black beans. it was soooo yummy. I think I am starting to like these salads better without the salsa and sour cream... the avocado was just fantastic!

    Dinner is still up in the air... Probably a veggie burger or dog with a salad and side of some kind of veggie... Maybe I will venture into the cauliflower! lol- turning it into something else of course!

    Just wanted to post that I love this thread! It produces so many great ideas for dinner!!!
  • rdw1 - there is an SBD friendly salsa (most homemade ones are, actually) recipe that is awesome on salads like that. It has avocados in it which really give it a dressing consistency when mixed around with the salad.
  • It's a grill night - japanese eggplant, summer squash, & leeks, smart sausages, one ear each of the unmentionable yellow vegetable

  • I was just missing this thread earlier today! Glad it was started!!! tonight is nothing special...sauteed seasoned chicken breast with peppers and onions, sauteed sugar snap beans and a tossed salad. Cheescake with blueberries and cool whip for dessert.
  • All of this stuff you guys are having sounds really good. I'm gonna have to steal some of your ideas for when I run out.

    Tonight is simple, I'm making turkey cutlet parmesan. I'm making a mixture of skim milk and an egg, and dipping the turkey cutlets in it, and then dipping the turkey cutlet into parmesan cheese to coat like a breading. Then, I'm going to bake the cutlets crispy brown while I make my homemade tomato sauce. (Canned crushed tomatoes, oregano, basil, garlic, fresh parsley tonight) Then I'm gonna pour some of the tomato sauce on top, and top with freshly shredded part skim mozzarella, and bake until the cheese is melted and the sauce is hot. I'll mix in some broccoli too, broccoli with tomato sauce should be good.
