Ok, I just tried this and it's not 1/2 bad...the recipe I got from an email group calls for 3T splenda...I thought that was a bit excessive, so I only put about 1.5 teaspoons in it..but I'm sure you can substitute another sweetener if you don't like splenda, like agave necter etc...just guessimate with the sweetener you use. I also thought maybe you can substitute natureal peanut butter for the mayo..haven't tried that yet.

I added a few crushed almonds and some cool whip on top..not too bad at all:

1 egg
1 T. mayo.
1/2 t. vanilla
3 T. splenda
2 T. unsweetened baking cocoa
dash salt

Stir together in mircowave proof bowl and cook in mircowave for 1 minute (adjust time for different microwaves)

Me too, I am so tired right now I am just trying to hold out until the kids go to bed, and then I will crash.

This sounds intriguing, I'm game to try it. But I think I'll substitute PB for the mayo and maybe use DaVinci SF peanutbutter syrup for the sweetener, too.

Yep, one serving..it comes out about 1/2 an inch in the bottom of a cereal bowl for me..bowl is about 4 inches across the bottom.

Thanks Cat for this recipe....I made it last night with the PB. I have to admit that I didn't know how it would turn out but was amazed how it "came together" in one piece when it was cooked. The 3 T of splenda seem like alot to me as well, but it might be necessary for bulk, idk. I'm going to try it with a little bit less next time and see how that turns out. Thanks again!

Gluten and dairy free friendly too :)

You can also do the same thing with a sugarfree fudge pop and peanut butter. I didn't know how to make a peanutbutter cup at first so I overmicrowaved it, and it made a little fudgey, peanutty brownie. :)
