Pasta Fagole

  • Ok so I'm terrible at measurements because I sorta throw this soup together so if you are willing to try this without exact measurements it's very versatile and easy.

    2 large boxed chicken broth or homemade
    1 large can of crushed tomatoes
    2 teaspoon olive oil
    Mirepoix mix or carot, onion and celery chopped up
    Minced garlic
    1 can cannelloni beans
    Turkey bacon
    Salt
    Pepper
    Basil
    Parmesan cheese

    Sautée the garlic, chopped celery, carrots and onion in the olive oil. Add 2 cloves minced garlic when the veggies are nice and soft. You can either add this as is to soup or food process, which I do because I dont like chunks.

    In a pot heat up the chicken broth, add the crushed tomatoes, veggie mix and let simmer for about 20 mins. Add in cannelloni beans, chopped up turkey bacon, Parmesan cheese, basil, salt and pepper. I do all of those spices to taste. Cook for about a half hour to allow the parm cheese to thicken the broth.

    I normally add ditalini pasta to this before SB so feel free to add in some ww cooked pasta at the end.
