Burrito Soup
 
I just sort of came up with this recipe on my own: I love burritos and tacos and honestly could eat them every day: so I came up with something that had the taste but not the unhealthy junk.

Burrito Soup

1/2 bag dry mixed beans for soup
4 cups chicken stock
1 can diced tomatoes with jalapenos
1/2 diced onion
1/2 packet taco seasoning

Place the beans in a pot with a lid and add enough water to cover. Soak overnight. Drain beans and place in a pot with the 4 cups of chicken stock. Bring to a boil, cover and reduce to a simmer. Simmer for 2 1/2 hours, stirring occasionally. I will add that you can use any type of beans you want, and if you use another type the cooking time might be shorter. If so, follow the directions on the back of the bag. Add the onion, can of tomatoes and taco seasoning, simmer for another 30 minutes.

I'll also add that taco seasonings contain some forbidden ingredients, albeit not much. If you're a stickler you would always just add the individual spices (chili powder, garlic, etc) but I'm lazy. This soup is great with add ins: fat free sour cream, pickled jalapenos, low fat cheese. I love this soup so much: I made it even before I started South Beach. I eat it every day for lunch. A word to the wise though: I already tried to make it in the crock pot and it was awful. So usually I save it for Sunday to make and then I have my lunch for the week.
