Rustic Turkey Sausage Stew
I was inspired by the fireside white bean soup (which I didn't have all the ingredients for) to make this
Rustic Turkey Sausage stew 1 lb Sweet italian Turkey sausage Garlic (i use the jar kind ) to taste 1/2 small bag frozen onions 1/2 small bag frozen Peppers 12 oz can mushrooms (with juice) 2 14 oz cans Italian style diced tomatoes 3 14 oz cans of beans I used 2 Canellini and 1 black eyed peas Olive oil or Cooking spray Balsamic Vinegar Italian seasoning salt and pepper (optional) Parmesan cheese *Put on the vent above your stove or open a window! 1. squeeze turkey out of casing (if you find this gross slice em in rounds) 2. spray bottom of Big deepish frying pan (or deep pot of your choice mine were dirty) Saute garlic onions peppers and some italian seasoning 3 When the onions and peppers have begun to carmelize toss in turkey (if using squeeze method break up chunks) 4 I never measure Balsamic Pour some in to deglaze the pan as the turkey cooks 5. Toss in can of mushrooms and liquid 6 toss in 2 cans of tomatoes 7drain and rinse 3 cans of beans and into the drink they go! 8 season accordingly with more italian seasoning and salt and pepper I topped mine with a little parmesan cheese My DH and My GF raved about it Servings 6 generous Servings |
I use ground turkey breast cooked with granulated garlic and Italian herbs instead of Italian sausage - lower fat, lower sodium, and no piggies! (DH being somewhat Jewish and all)
