Wendy's Chili (can be crockpot)

  • This one originally came from Top Secret Recipes. I personally like this one better than the Crockpot Chili recipe

    2 pounds ground turkey or lean ground beef
    29 ounces tomato sauce
    2 16-oz. cans kidney beans, drained and rinsed
    2 16-oz. cans pinto beans, drained and rinsed
    1 cup diced onion
    14 1/2 oz. can diced tomatoes with green chilies
    14 1/2 oz. can diced tomatoes with seasoning (chili seasoning or green chili, or italian seasoning)
    sm can green chilies (optional for added hotness)
    1/2 cup celery, diced
    2-3 teaspoons ground cumin
    3-4 tablespoons chili powder
    1 1/2 teaspoons black pepper
    1-2 tsp. unsweetened cocoa powder
    2 cups water
    2 c. V8 (or tomato juice)
    original recipe called for 2 tsp. salt (I omitted it because the canned tomatoes/sauce all have salt)

    Brown turkey/beef and drain thoroughly. Combine remaining ingredients and simmer 2-3 hours. This makes a lot. I put mine in crockpot but it takes a large one. I use two cans of Rotel instead of the cans of tomatoes. This last time I used Rotel chili flavor and it was great!
  • I just had a bowl of this out of my crockpot. YUMMO!!!

    I used ground turkey, skipped the salt and the cocoa powder.

    Cost roughly 10.50 for me to make a HUGE crockpot of this!

    Can this be frozen? I would love to make this but it will only be for one person. Even cutting the recipe in half I'm sure will make a huge amount.

    I'm not Barb, but this is great frozen in individual serving sizes.

  • Oh goodness, I make chili all the time, but i've never tried putting unsweetened cocoa in it. It is AMAZING! really smoky and tasty.

    I made chili from a recipe on this site for phase 1. It is amazing. A bowl keeps me satisfied and very full. I feel like this is cheating...it seems too good to be true!!!

    Is this really ok for Phase 1? Gosh I hope so.

    And, yes, it's totally Phase 1 friendly, so enjoy it guilt-free.
  • This recipe doesn't even come close to fitting in my slow cooker but it's soooo good. Here's my modified recipe:

    1 tsp oil
    1 onion
    1T minced garlic
    ~800g lean ground turkey
    2 cans Heinz chili style beans
    1 can Aylmer's diced chili-seasoned tomatoes, undrained
    1 can Aylmer's fire roasted diced tomatoes, undrained
    1 can (213mls) Hunt's tomato sauce
    2 celery sticks, diced
    2 teaspoons ground cumin
    3 tablespoons chili powder
    1.5 teaspoons black pepper
    1.5 tsp unsweetened cocoa powder

    Cook onion & garlic until onion softens. Add ground turkey and cook until browned. Transfer to crockpot. Add all other ingredients to the crockpot and cook on low for 6 hours or until dinner time... whichever comes last.

    Serve it on top of a bed of smashed cauliflower and topped with a little sour cream and sharp cheddar!

    I am new to SB...actually we are starting Monday.....this sounds so good...I LOVE chili!! What is considered one serving please? TIA

  • Holy cow this is awesome. Way too much ingredients for my little crockpot. Still simmering on low as the celery needed to soften some. I used 1/2 the amount of ground turkey breast, only because I forgot to get a second pack, but kept everything else the same. Perfect lunch for this dreary day. Thank you for sharing!!
