Ham and lentil soup
Don't throw away that ham bone from Easter dinner! I took mine and made this yummy soup! Just the soup is phase 1. Add the dumplins and carrots and you have a phase 2 meal. I left out the tomatoes and onions because I hate them!
Soup:
1 ham bone (with meat on)
1 pkg. lentil beans
3 qt. water
2 ribs celery, chopped
1 large onion, chopped
4 medium carrots, diced (Phase II only)
2 red peppers chopped small (Phase I, instead of carrots)
1 lb. can tomatoes
1 Tbsp. garlic powder
3 Tbsp. ham base
2 Tbsp. Dried Parsley
Dice ham pieces. Wash and pick clean lentils. Bring
beans and ham (and hambone) to a boil in water. Remove residue from top with a strainer. Add celery, onion and carrots, ham base and spices. Simmer about 1 1/2hours. Add crushed tomatoes. Remove ham bone and add any ham that is left on the bone to the soup. Soup may vary, so use judgement on ingredients.
For Phase 2 people
Dumplings (Sinkers)
1 c. whole wheat flour
1 egg
salt to taste
water
For dumplings, put flour in bowl and add the egg. Add a
little salt and mix together. Add water a little at a time
until consistency is right. Drop by spoonfuls into boiling
soup. Cook until done. Tastes great the next day.
