Red Pepper Tomato Soup
 
1 tbsp olive oil
2 onions, chopped
3 cloves garlic, minced
1 teasp. hot red pepper flakes
1 can (28 oz) stewed tomatoes
3 cups veg. or chicken broth
1/2 cup chopped roasted red peppers(I use the ones in a jar)
pinch pepper

In saucepan heat oil over medium heat; cook onions, garlic and red pepper flakes stirring occasionally, for 5 minutes or until softened.

Add tomatoes, stock and red pepper and pepper; bring to boil. Reduce heat and simmer for about 15 minutes or until slightly thickened.

With immersion blender or blender, pure soup; reheat if necessary.

I always double the recipe.

Is it 127 cals for the entire recipe?

its per serving and I have to confess that sometimes after the initial simmer I throw in a 1/2 cup of basmanti rice and let it cook for 15 more minutes and then blend. I wonder what it would be like with barley or other SB friendly starch.

Sophie, my recipe is almost exactly like yours! :)

For added protein and fiber, I like to add a can of chickpeas or cannellini beans before I puree it. I've used black beans in it, too, for a nice twist.

Thanks for sharing your recipe, it's perfect on a cold winter day. Yummy and satisfying. :T

Cottage - I made this soup today and added the beans as you suggested. It was wonderful and now I can have it because when I added rice only DH eat it. Thanks, never would have thought of it myself.

has anyone tried this without the red peppers? I made it for the first time today and like it, but it's a bit too spicy if I want to serve it to family. (They don't like spicy.)

Just omit the hot red pepper flakes, Wonderlin, and the soup should be mild enough to suit your family's tastes. :)

Thanks! I wasn't sure if it was the flakes or the actual red peppers. I like it and have shared with some coworkers who like it, but I'm sure my family would not like the spicy!

I made this tonight! I liked it. I changed a few things though -- used 1 c. less stock and next time would use a little less red peppers. But it was YUM!
