Chicken Soup

  • Mom's Magic Chicken Soup

    3 to 31/2-pound whole chicken
    1 medium chopped onion
    2 ribs celery, chopped
    Several sliced carrots (add the amount that your carb level dictates)
    2 15-ounce cans stewed tomatoes, chopped
    4-ounce can chopped green chilies
    1 clove garlic
    1 package taco seasoning
    Sour cream
    Shredded Cheddar cheese

    Place chicken in a large soup pot and cover with water. Add 1/2 chopped
    onion and celery and cook for 1 hour. Remove chicken. Strain liquid to
    obtain a clear broth, then return broth to the pot. Add the remaining
    chopped onion, sliced carrots, stewed tomatoes, chopped green chilies,
    garlic and taco seasoning to the broth. Bone chicken, then add it to the
    soup. Cook until vegetables are soft. Garnish servings with sour
    cream and shredded Cheddar cheese.
