Cream of Curry Broccoli Soup

  • If you like a spicey flavourful soup......this is it.

    Took me about 30 min to make

    1 medium chopped onion
    2 tsp curry powder
    2 tbsp butter
    1 14 oz pkg of frozen broccoli, or 3/4 - 1 lb of fresh chopped course (about 3 1/2 cups)
    2 cups chicken broth
    1 cup water
    1 1/2 tsp lemon juice (I didnt use any)
    1/3 cup sour cream

    In a heavy saucepan cook the onion, curry, and salt and pepper to taste in the butter over medium heat, stirring until the onion is soft.

    Add the broccoli, broth and the water, and simmer the mixture covered for 15-20 min. or until the broccoli is very tender.

    In a blender puree the soup in batches until it is smooth, transferring it as it is pureed to another heavy saucepan.

    Wisk in the lemon juice, salt and pepper to taste, heat the soup over low heat, and wisk in the sour cream (careful not to let the soup boil)

    Makes about 4 cups (2 servings)
