Wave 1 - Roasted Zucchini with Thyme
This is easy and tasty.
Roasted Zucchini with Thyme 3 zucchini, quartered and cut into chunks, or use a mixture of zucchini and yellow squash 1 onion, sliced 1 tablespoon olive oil 1 teaspoon thyme salt & pepper 2 servings if this is your only vegetable for the meal Preheat oven to 450. Toss zucchini, onions, salt, pepper ,thyme and olive oil on a baking sheet. Roast 30 minutes, stirring halfway through. |
I turned this into 3 servings instead of 2 but here is the nutritional info per serving: 82 calories, 5 g fat, 3 g protein, 9 g carbs, 3 g fiber, 0 mg cholesterol, 7 mg sodium.
