Fagioli - The Bean Cuisine of Italy It's a great book, especially for this time of year. It starts with bean basics and describes the various types of Italian beans and everything you need to know to cook them.
The recipes include appetizers, salads, side dishes, a wide variety of soups, and main dishes that combine beans with meats. Every recipe uses simple, healthy ingredients. It's not a "diet" cookbook, but almost everything should be acceptable, or easily modified by using a little less oil, etc.
It's my new favorite cookbook, or at least close to the top of the list
