I always am more excited to try a new recipe if someone else has made it and really liked it... so here I will give my wholehearted approval of the recipe on Wave One on page 188 of the book.
I cut my (pre-marinated, so I skipped the first step) pork loin in half b/c there were only two of us, and then cut the rest of the ingredients in half, too, to make 2 servings. I will have the other half in a few days when my mom comes to visit for supper.
I also cut the vegetables into chunks -- not just into halves like in the recipe -- so that I could cover them with seasonings, cook, and serve them easier.
This was so delicious and it provided TOO MUCH food for me and my boyfriend with a very hearty appetite. This recipe is a sure winner.
