Here you go Sandra! I just did this for dinner tonight...it's a modified version of what's in The Sonoma Book. I used what I had on hand...but it's all legal
HH likes fish, but I don't care for anything that had fins...so I'm having a small pork chop.
I prepared this ahead of time and it's waiting in the 'fridge til time to cook.
First I seared the chop and set it aside so that both meals will finish at the same time. Fish fillets are thawed.
Slice the following and divide into 2 servings:
2 small yellow squash (sliced pretty thin)
1 medium zuchinni (sliced pretty thin)
3 roma or 2 regular tomatoes (sliced thick)
4 black olives, sliced
2 green onions, sliced (I use the bottoms & about half of the tops)
3 artichoke hearts, quartered (use canned or bottled)
8 small broccoli florettes
8 snowpeas (whole)
I didn't have any fresh spices, so I got out my mortar and pestal and ground the following together. Used about 1/2 tsp of each:
kosher salt
black pepper
rosemary
garlic powder
ground basil
and whatever flavors you like
Mix spices together with about 3 tablespoons of olive oil and set aside so flavors can meld.
When it's time to cook, fold 2 large pieces of parchment paper into triangles. Open triangles.
On half of one parchment sheet, arrange half of the vegetables & place fish on top. On half of the other parchment sheet, place the chop on the bottom with the veggies on the top. Drizzle the olive oil & spice mixture over your servings. Fold parchment paper over each meal; crimp and fold the edges, twisiting the corners. You should have 3 twists.
Place packets in a shallow baking dish. I use my 13" glass lasagna dish. Bake at 375 for about 30 minutes or until fish is flaky.
Serve immediately. I serve in large pasta bowls because there's plenty of juicy broth when you open the packets!
I cook several servings of Barilla Plus Penne Pasta ahead of time and keep in my 'fridge for quick meals. If you want to, you can serve 1/2 cup (each) of this pasta with your "en papillote" meal. I measure my 2 servings of pasta and put a teeny bit of gorgonzola and a teeny bit of fetta cheeses along with a teeny bit of olive oil and garlic....then microwave a minute and serve with your en papillote.
