Banana Bread
1 1/2 cups whole wheat flour 1 1/2 tsps. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 tsp ground cinnamon 1/2 cup splenda 2 egg whites or 1/3 cup egg substitute 1/2 cup plain non fat yogurt 1 tsp. vanilla 2 Tbls. ICBINB or smart balance, melted 3 large ripe bananas ( added 5 small bananas instead) About a c of pecans Preheat the oven to 350 F. Coat an 8"x4" loaf pan with nonstick spray. IN a medium bowl, comine flour, baking powder, baking soda, salt and cinnamon. Set aside. In a large bow, with an electric mixer, beat splenda and egg whites until light an fluffy. Blend in yogurt, vanilla and ICBINB. Mash bananas with a fork an stir into yogurt mixture. Stir in the flour mixture. Pour into prepared pan. Bake 50-55 minutes or until wooden pick intered in the center comes out clean. Cool on wire rack in pan for 10 minutes then remove from pan and cool completely. I ate some while it was still warm and it was really good. Even better when It's cold. Makes 1 loaf (10 slices) Hope you enjoy this as much as I did. Tennie |
I made this bread last weekend and have eaten a slice as part of my breakfast all week - it is VERY good.
DH liked it enough to take to work for a snack a few days. Ally |
