Lemony Cauliflower

  • 1 medium cauliflower (about 2 pounds) broken into flowerets
    1/2 cup plan low fat yogurt
    1/4 cup low fat mayonaise
    1/2 tsp grated lemon rind
    1 T lemon juice
    2 tsp Dijon mustard
    1 T freeze-dried chives

    Arrange cauliflower in a vegetable steamer over boil water. Cover and steam 5-6 minutes or until crisp-tender (this can be done in the microwave). Transfer to a serving platter; keep warm.
    Combine yogurt and next 4 ingredients in a small bowl; stir well. Pour yogurt mixture over hot cauliflower. Sprinkle with chives. Yield: 5 servings (about 81 calories per 1-cup serving)
