Moist Bran Muffins

3 cups sugar
1 cup oil
4 eggs
1 Tbl plus 2 tsp baking soda
1 Tbl plus 1 tsp cinnamon
2 tsp salt
17 oz apple sauce
5 cups flour
1 quart buttermilk
17 oz bran flakes

Combine all ingredients at medium speed for 2 minutes. Bake at 400 degrees for 16-18 minutes.

I don't know how many muffins this makes, but you're supposed to be able to keep the dough in the refrigerator and just take out what you need in the morning. I know it makes a lot of muffins. Thanks for any help.

Here is the recipe converted into MasterCook format. I arbitrarily decided to run the nutritional breakdown with 48 muffins. The entire recipe makes a batter with 9169.6 calories, 260.7 grams fat, and 122.9 grams fiber. If you make 48 muffins, then each would be 191 calories, 5.4 grams fat, and 2.6 grams fiber, according to MasterCook. That would be 4 points.
