Calorie Counters ~ Need Dinner Idea's & What's 4 Dinner?
Hi everyone. I am trying to figure out what to have for dinner that is healthy. Normally I would be ordering fried chicken (cheap and yummy dinner) and potatoe wedges for my family. But I think that would be high in calories (I can't find it in fitday yet) and definetely NOT very healthy.
Then I thought about ordering a pizza.. but I am not sure if that would be good either. I am italian... and italians can eat a lot of pizza and pasta lol.
Then I was thinking about italian beef, or cheeseburger.
I am not sure what I should have. I just love fried chicken! And I can't have it and not eat the skin. So I think that would have to be out.
I personally would get out of the habit of getting take out for dinner all of the time-especially fattening things such as the fried chicken and fried potato wedges.
If you MUST get a take out chicken or some sort of convenience food for dinner rather than cook, do you have a local grocery store that has chicken in their deli section? A lot of them have the rotisserie roasted chickens now that you can get there for a quick dinner. Instead of the potato wedges, grab a bag of salad and have that as your side dish, and maybe some fresh fruit.
How about making your own "oven fried" chicken? It's really good. We have a recipe on site for Oven Fried Honey Chicken that sounds good. Or try this recipe for Cornflake Chicken. According to the votes and reviews, people seem to love it. I used to make it all the time for my son when he was a picky teenager, and he loved it You can do something like that, and also make your own oven baked potato wedges.
I made crispy baked chicken (the corn flakes chicken) last night! We love that one! I have been making that recipe for months. WW has a couple different versions of it, and so does the American Heart Association, which is not that much different from the recipe you have! I love it. It is so yummy!
The honey chicken I have not tried! That would be something to check out!
Dijon mustard and soy sauce is really good on chicken too. Just marinate the chicken for an hour or so and bake it in the oven until the skin turns crisp and golden. You can always remove the skin afterwards.
But how about fish? I love fresh salmon and it's so easy. You just put the pieces on a pan - don't add fat - lots will come out of the fish while it's cooking - it takes about 15 minutes. Season with salt or pepper or put on whatever spice you feel like. Or cut out some veggies eg. carrots, onions, leeks. Put them in a baking tray and place the salmon on top. Salt and pepper. Add a little water or white wine. Cover with tin foil and cook it in the oven. You can use the juices in the tray to make a sauce if you like. Serve with boiled potatos or oven-baked wedges.
We have never had salmon before. We do like orange roughy, catfish, and frozen fish fillets and fish sticks. Does salmon taste anything like those things?
We love chicken here! All of the different recipes for chicken with corn flakes is awesome! I will have to try soy sauce and mustard. I have not seen that before.
Salmon definately doesn't taste like frozen fish fillets or fish sticks. Not sure about the other two you mentioned since I've never had them. It's a fat fish but most of the fat is unsaturated so it's supposed to be good for you. The meat has more flavor and is less dry than white fish if you buy it fresh - I guess you can say it's flaky like tuna but more tender.
Salmon is a very rich fish, so you'll find that you won't need as much as catfish, etc. It's also a little expensive unless it's on sale. I buy a smallish piece and then supplement it with brown rice, veggies, etc. I make a sauce for the salmon with lowfat yogurt and dill. You can broil it, bake it, saute it, or cook in the George Foreman. Another way to cook it which is yummy is to mix a can of Rotel (tomatoes and chilies) with some mayo, spread it on the fish and cook it in a covered skillet for about 15 minutes. You can do this with any kind of fish or even chicken.

Thanks for the added info! I do appreciate it. I am going to have to see. Hopefully it will be on sale. I think all fish is costly lol. But anything good always costs more I am learning.
I have a goerge foreman! I forgot I even had that lol. My kitchen is so small I have to hide things (foreman, crock pot, tupperware etc) else where so I have room for everyday things in the kitchen lol.
