New Chick On The Beach

  • Hello Fellow Chickies,
    I've been enjoying the SB forum for several weeks, and finally decided to start participating. DH and I have been on SBD for 7 weeks, with DH losing 30 lbs, and me losing 20 lbs so far. It has been VERY encouraging to find that many of you have experienced some of the same problems that I have had, such as constipation and weeks with no weight loss at all. All in all we've found the diet satisfying and easy to follow, except when we eat out or need to fix a meal in a hurry. Maybe some of you have some hints I can use for fast meals?

  • One of my fave "semi-fast meals" is dinner sausage, a can of black beans, and mushrooms. I just brown the sausage and mushrooms a little, throw in the can of black beans and heat up. If you have the time you can also make some brown rice to serve it over.
  • Most of my meals are quick and easy. I have lots of seasonings to go on meat and taste especially good on boneless chicken breast. The meat only takes about 15 mins to stir fry, grill or pan fry (using a cooking spray). Tonight I had Piri Piri Chicken with salad. Just season the chicken and pan fry using spray. I put a lid on the frypan to turn it into a mini oven then it cooks quicker and stays moist. You can make the salad while the meat cooks. Once the weather cools down I will do lots of stir frys using brocolli, cauli, asparagus, sprouts, celery, capsicum or whatever. The meat can go in there too.

    Frittata is a good one if you are in a hurry. Just whisk a few eggs with some salt, pepper, a little water and chop in some mushrooms, tomatoes, capsicum, grated courgette, onion, chopped ham, salmon or whatever appeals. I usually add some grated cheese but make sure it is low fat. Pour it into a sprayed frypan and cook on a medium to high heat until it is almost set. Finish it under the grill to brown the top (I think you call it a broiler).

    In lieu of a sandwhich or cheese on crackers when you are eating on the run use slices of cucumber as a cracker and top with ricotta, cottage cheese and slices of vegies like capsicum, raw mushroom or sprouts. It will take awhile to get fill like this but remember you can have low fat milk or yogurt, low fat cheese and a small handful of peanuts.

    Oh and in my sausage black bean thing I put in some Cayenne Pepper and lots of Oregano for seasoning.
