Engagment Chicken:

1 whole chicken (about 3 lbs)
2 med. lemons
1/2 cup lemon juice
salt and pepper

Preheat oven to 400 degrees. Wash and dry chicken, then rub the inside and outside with the lemon juice, season with salt and pepper. Prick the whole lemons and place them inside the chicken. Place in a roasting pan breast side down, reduce oven temp. to 350 and bake for 15 min. Remove from oven and turn chicken breast side up and bake for 35 min. longer or until juices run clear.
