Phase 2~Pancakes or Cookies
1/3 cup dry oatmeal (regular rolled oats)
1/2 tsp cinnamon
3 pkts Equal (or Splenda to taste)
touch of vanilla extract
1/3 cup low fat cottage cheese
1/3 cup eggbeaters
1 scoop plain or vanilla flavored ,low-carb protein powder
Mix all dry ingredients together in a small bowl. Then mix in the remaining ingredients. Spray skillet with Pam and place mixture on skillet and cook as you would a pancake (flipping when bottom side is golden brown). If I make this as one pancake, I'll cut it in half before flipping. You can also divide the mixture into 4-6 small "cookies". You could even place a few blueberries on the pancake before flipping over , for a nice alternative.
