I have greatly increased my veggie consumption, but am still hanging on to my animal protein, but in lesser amounts. I can't say I will never go completely plant based. I am just a die hard meat and egg eater, but the more I hear about the benefits of plant based eating, the more I steer toward it and away from animals.
Good luck to you with this!
Many people start as you have, by upping their veggie nutrition intake. So far since 30 November I have dropped 40 lbs. My labs are looking very good, causing my dr to reduce my metformin.(Yeah!)
Barnard is one of my favorites. I have a good friend whose heart health was really turned around in 3 weeks following Esslestyn. The Quick and Easy China Study Cookbook is my favorite veggie cookbook.
Hope you have great success in your journey.
