Breakfast sans eggs or deli meat?

    Any suggestions on breakfasts without eggs or deli meat wraps? Just having a brain fart about this and I always get good suggestions here. (Also the atkins book sample menu is very limited.)

  • Well, depends on how low carb you are doing. You could have a big salad with cheese or chicken. Don't limit yourself to "breakfast" food, have some lunch meals too!
  • I like using leftover chicken, shredding it, reheating it in butter in a small pan, then sprinkling some Mexican spices over it, olives and some Mexican cheese. Can do the same with any meat. Serve a little avocado on the side.

    I also make my own bulk sausage with ground meat and a variety of seasonings. I make it into patties and freeze them, then thaw the night before I want to cook them and cook them in a pan. They're nice with some sautéed shredded zucchini or sautéed chopped cauliflower hash on the side.

    Tuna or chicken salad on celery.

    Steak and mushrooms.

    Shredded meat in a bowl, then ladle hot broth over the top. Top with chopped cilantro, sprouts, a few drops of Tabasco and a squeeze of lime juice.

    Smoked salmon and cream cheese rolled up in a lettuce wrap.

    Braised spinach with chicken and cream.
