I used to cook about a weeks worth of meals in one day while I was in college... Cook on Sunday several things, portion it out that day, and then stick it in the freezer. Shoot, if you really wanted you could do a month's worth of meals. It does take time, but then you don't have to worry about cooking every day. Then I could be go go go all week but just grab a container from the freezer and a handful of veggies (I'd cut up veggies while everything else was cooking) and an apple. Figured out how many calories I was taking in in advance. Was boring meals but I started to eat for nutrition rather than eat to appease my taste buds. Sometimes I'd put in effort and make a good meal on weekends but mostly same thing. It worked, and I did lose about 60 lb in college during those couple semesters.
