Quinoa Tabbouleh - Soooo Good!

  • So... I'd been reading about Quinoa and finally tried it, but didn't like the high calorie count of it on it's own. I went looking for a way to add to it so I could have a bigger portion.

    I found this recipe and it turned out SO good I had to share it. When I read reviews of the recipe on allrecipes.com, it looked like people could do just about anything to it and that it still turned out, so I tweaked it to my preferences.

    All I can say is that it was gone (even my husband liked it!) immediately!

    Hope someone here finds it useful, too.

    Quinoa Tabbouleh
    2 cups water (I used low sodium chicken broth instead for more flavor)
    1 cup quinoa
    1 pinch salt
    1/4 cup olive oil (I used 1/8 cup)
    1/2 teaspoon sea salt
    1/4 cup lemon juice
    3 tomatoes, diced
    1 cucumber, diced
    2 bunches green onions, diced
    2 carrots, grated
    1 cup fresh parsley, chopped (I used cilantro)

    In a saucepan bring water to a boil. Add quinoa and a pinch of salt. Reduce heat to low, cover and simmer for 15 minutes. Allow to cool to room temperature; fluff with a fork.

    Meanwhile, in a large bowl, combine olive oil, sea salt, lemon juice, tomatoes, cucumber, green onions, carrots and parsley. Stir in cooled quinoa.
