I do a dip that I bring to parties and stuff that is made mostly with 99% fat free beef denison's chili. To make a small batch I would mix one can of that with 1/2-3/4 cup of reduced fat cheese (they carry 2% milkfat "quesadilla" blend in my grocery stores that is perfect!), a dash of hot sauce (I like tobasco brand chipotle sauce), and nuke it in the microwave in a bowl for about 4-5 min total (or until when you stir the cheese and chili mix evenly), and garnish with chopped green onions and half a diced avocado. It is LOADED with protein and good fats, and it isn't too bad when compared to a loaded queso dip. I love it and it is great with baked pita chips, or if you feel crazy, whole grain tortilla chips
