Question Measuring Your Food

Ok, so I've recently started measuring my food so that my calorie count can be more accurate. Today, I decided I really wanted some banana nut muffins. I had Betty Crocker, the premium one for muffins and quick bread. I used only half a cup of 2% milk, 2 large egg whites, 1/4 cup of water and 1/4 cup canola veggie oil.

I measured my batter into paper cups at 37g each, like the box says. It also says there are 12 servings in the box. I got 19. Why? The volume shouldn't have changed that much, right? Everything was measured but the numbers are off. I just want to know if someone can explain this to me.

Is it 37g of just the mix, maybe? Or 37g once they are baked? (they will lose moisture while baking). In that case, I would just divide it into 12 equal portions.
