Default Delicious quesadilla

Tonight I made a black bean and zucchini quesadilla for dinner, using a recipe I found in a magazine (I think it was Fitness magazine). It was SO good, I just had to share.

1/2 cup black beans, rinsed and drained, mashed with 2 tablespoons of salsa (I got a delicious organic one loaded with chunks of veggies)
Mix in 1/2 cup of finely diced zucchini

Spread on a whole wheat tortilla and top with 2 tablespoons of cheese (I used low fat pepper jack but use whatever you want)

Broil for about 1 minute on each side, until cheese is melted.

If you use a 12 inch tortilla and all the stuff listed above, it's about 370 calories and DELICIOUS!!! I actually could have had only half of that and probably been satisfied for a while, but I was starving so I inhaled the whole thing.

This is perfectly legal on the Sonoma diet if I use a high fiber tortilla.

I have made something like it by using a few spoonfuls of black bean soup.
Adding the zuchini is a good touch.

Yum, I love quesadillas and I just bought some black beans! Will have be be making this soon!

Sounds amazing! Dumb question: does the zucchini need to be raw or cooked?

Oh, yum!

I love making one with the following:

flour tortilla
black beans
homemade pico de gallo (diced tomatoes, diced onion, cilantro, sometimes green onions, all to taste but about 1 roma tomato per quesadilla)
low fat Mexican blend cheese
fat free sour cream

I put the black beans and cheese on half the tortilla and stick in the oven for 8-10 minutes. Take out, top with pico de gallo and sour cream. Cut into pieces, enjoy.

Yum. Now I'm hungry.
