You can almost make pesto yourself with only a small amount of nuts, and chicken broth instead of the olive oil. Lots of basil, garlic, a moderate amount of parm, and nuts if you want (but I usually don't include). Salt, pepper, bliss.
A favorite website of mine, choosingraw.com, has a few different recipes for pesto:
Slothful Single Girl’s Summertime Pesto:
2 cups basil, packed
¼ tsp sea salt, or to taste (I used a bit less)
2 tbsp olive oil
AND
Cilantro Pesto
Ingredients:
½ bunch (about 1 cup tightly packed) cilantro
¼ cup pine nuts
½ tsp lemon zest
1 tsp lemon juice
¼ tsp salt
¼ cup + 1 tbsp olive oil
Most of her dishes can be made non-raw with a few subs (wheat noodles instead of spiraled zucchini ect).
YUM I love pesto. I hate those shirataki noodles, though. I've never tried pesto on a spaghetti squash (which is my usual sub for pasta) but I imagine it would be quite yummy!
theres this new basil in a tube, in the fresh herbs section, tastes similar to me as pesto when i add to dishes. basil has almost no cals, with a dose of vit. C.
i like it in tuna salad(dont need as much light mayo), black beans and salsa, list goes on and on.
