I am not entirely familiar with South Beach, but have been on a no carn (well less than 60g per day) diet for the last 10 months or so...I have with a few hiccups along the way stuck to the phase 1 part of this for all that time, though most people move to a carb introduction phase much more quickly.
Like you, I liked the kind of certainty that if I stuck to it, I absolutely would lose weight each week, but as I say South beach is not exactly the same as the diet I'm on, but I am pretty sure that phase 1 puts you in Ketosis? This being true they usually reccomend not staying too long in Ketosis unless you are being medically monitored, which I was... lots of info on the web if you google it
