Default Mashed Cauliflower--WOW

I found this idea on some thread here and tried it nice before last alongside salmon and steamed veggies. I first steamed the cauliflower until it was pierced easily. Then I added my 5 Calorie margarine, salt and pepper and mashed the heck out of it. OMG! I cannot believe I never knew about this. I absolutely adore it and cannot wait to make more.

I was surprised as well. I mashed the cauliflower with a couple potatoes to put on a shepherd's pie. I thought it would be overwhelming, but it was good. The whole family just thought it was mashed potatoes. Bonus!

Ive attempted this two times. The first time I only had a blender and I added way too much milk, so blahhhh. The second time I did it I just mashed it with a manual masher and it was descent, but not wonderful. I wish I could get it to turn out, I love cauliflour and am on a low carb diet. Maybe I'll try again soon....

Mashed is good... I also like it roasted. WOW, it's so good ! It was on sale last week for $.98 a HEAD last week at our local Wal-mart. I ate a bunch!!!

I grew up in the Mississippi Delta on a rice farm, so we I grew up with rice at every meal. It's one of those things I've had to modify as obviously rice and gravy every dinner got me into this mess ;>

I also like to pulse some in the food processor for a bit (just to break it up into smaller hunks), pop it into the microwave for a bit and then mix half and half with my brown rice. I can't tell a difference when it's all mixed up.

I sprinkled mine with chives. My family didn't know it wasn't potatoes until I told them. I didn't add milk. I only added Smart Squeeze 5 calorie margarine, salt and pepper like I mentioned above. I can tell you this, this will be a staple in our home from now on.

Maybe try steaming it longer than usual. There were some little bits here or there in it but for the difference in calories between cauliflower and potatoes, I am WAY okay with it.

I love it! Something that works really well for me is using my immersion (stick) blender, which really helps it get a great texture.

I also tried this YESTERDAY. I was AMAZED! I wish I discovered it before! I've been low-carbing it since New Years and I can't believe I've missed two whole months of mashed cauliflower goodness

Next time you have it try it with some herbs and a little cream cheese instead of margerine. It is delicious that way.
