  • The avocado is number one for vitamin E, lutein, glutathione and bet-sitosterol among the twenty most commonly eaten fruits. I don't pretend I know what all those things are. Avocados actually improve the body's ability to absorb nutrients from foods. They are high in calories.
    Eat avocados on a whole wheat bun with a salmon patty, in turkey tacos,
    with a salad.
    In moderation avocados are a fantastic addition to anyones healthy meals.
  • Oh my goodness, in my opinion they are SO good! Delicious! I just had one tonight with my supper actually!

    I oftentimes spread them on a pita as one would butter, mayo, etc. and eat them that way! SOOO tasty! Another way I like to eat them is to cut them up in small squares or chunks in my salad! I've heard of someone eating them with vinegar or salad dressing, which I don't think I could do... but they are so yummy. Seriously. And their fresh yellow/green colour - I love seeing it on a pita! Just make sure you let them ripen before you eat them. I like to buy them when they are firm and wait until they are moderately soft to cut them. But not too soft, you don't want them squishy.

  • I find avocados absolutely delicious - they have a rich, buttery taste. They are good and good for you, but they pack a calorie wallop (think of natural peanut butter - so healthy yet so high in fat and calories).

    I love chopped avocado in my bbq salad, I love putting slices on a turkey sandwich - it is wonderful. I consider 1/4 avocado a serving. If it fits into your calorie budget for the day - definitely go for it, they provide huge health benefits and a lot of good, heart-healthy fat.

  • I could eat an avocado just by itself. I grew up in California and grew up on avocados basically.

    I love them in dishes and alone. They have a lot of good vitamins and fats. If there was one fruit that I could choose to have, I think it'd be the avocado

    I love avocado plain, made into guacamole, sliced and in salads, on sandwiches (sliced avocado is wonderful on turkey and veggie burgers) and in making a favorite little concoction of mine - I take thick slices of eggplant and top those with slices of avocado, then add slices of tomato, then sprinkle them with parmesan cheese (mozzarella works good too) and bake them.

    I miss fixing that so much! The reason I haven't lately is because store-bought tomatoes are just gross to me (I grow my own every summer and I get spoiled on that taste) so that's a seasonal treat for me.
  • Here is a great guacamole recipe that subs a little of the avacado with peas! It's really yummy and isn't quite as caloric as normal guac...which I love!

    Guacamole
    Low Calorie Recipe
    Ingredients:
    1/4 cup onion, chopped
    1 teaspoon garlic, minced
    2 teaspoons chili powder
    2 teaspoons cumin
    2 cups frozen peas
    1/3 cup water
    4 teaspoons lemon juice
    1/4 cup avocado, chopped
    1/4 cup tomato, diced
    Salt and pepper to taste

    Recipe makes five, 1/2-cup servings.


    Directions:
    Cook first 4 ingredients in a non-stick pan over medium heat until onion is soft. Add the peas and water. Cover and cook 3 minutes. Puree in blender until smooth. (A blender works better than a food processor for this recipe.) Let cool and add remaining ingredients. Serve as a side salad, with tortillas or with nacho chips.

  • Yum. Avocados are definitely my desert-island food. If I was stranded on a desert island, I would be very content to eat avocados only every day for the rest of my life.

    They can be calorie-heavy, but the nutrients more than make up for it. I will put sliced avocado on anything in lieu of cheese. 1/8 of an avocado wrapped in sliced turkey is a great snack.

    Avocados make me happy.
  • Today, I was out and about with DH and picked up a veggie sandwich at a local kabob shop (their bread is awesome). It had avocado in it. It was sooo good. Mushrooms, spinach, avocado, alfalfa sprouts and avocado, YUM!

    My favorite little summer salad:

    1 tomato, diced
    1/2 green bell pepper diced
    1/4 to 1/2 seeded jalapeno, diced (as hot as you like)
    a little chopped cilantro
    juice of one lime
    little olive oil

    Mix it all together and put in the fridge for about an hour to let the flavors blend. Add 1 avocado, diced right before you serve it and toss it all together.

    Mmmm. Just enough bite and heat because of the jalapenos, but the avocado cools it right down again.

  • I love it plain, sprinkled with balsamic vinegar, on salads, on sandwiches, etc. I love guacamole too, but I tend to over eat chips when guacamole is around.
  • This thread is great! I love guacamole! I too tend to eat too many chips if it is around. I've never tried an avacodo, but I will. Thanks for all of the great ways to use it!
