According to my plan book - this has 2 fruits and a starch (without walnuts). I'm confused - what is counting as a starch?

Maybe the simple fact that it's from McDonald's?

Yeah, that really doesn't make sense.. Maybe they put a preservative on the apples to keep them fresh longer and that counts as the starch.. Good question for the COD...

maybe it's in the dip/yogurt--it contains sugar, corn starch, corn syrup, etc.. (?)

I had one of these yesturday. Actually, here in Long Island they are no longer a salad- it is smaller and calleda snack. It did come with a packet of granola on the side- perhaps that is what they consider the starch.
