I saw this this past weekend on Everyday Foods on PBS. It was so simple. Cook a pound of barilla multigrain or any whole wheat penne and 2 minutes before the time suggested is up add a pound of washed baby spinach to the water. Cook 2 minutes and drain well. While hot toss with small amount of olive oil and add a spoonful of low fat ricotta cheese.Sprinkle with toasted walnuts. (They used pinenuts) Now I made changes, I only had chopped frozen spinach so added that. I also warmed my bowl in microwave as I wanted the cheese warmer and sprinkled with garlic powder and red pepper flakes. I had leftovers and one meal added lemon zest. Even Broccoli would be nice in here. Kathy
