It's Monday's Menu, 5/15/06
 
This isn't core---where did that wagon go??

b: rf cheese (1)
l: michelina's lean gourmet meal (2); pc of bread (1); carrots, coke zero
s: sf jello; apple
d: ??

I forgot to tell you all that I tried a new recipe this weekend. It isn't completely core because it uses 98% ff cream of chicken soup, but it evens out to around .5 pt/serving. Not too bad. It was really tasty, even DH liked it. I didn't tell him it was good for him. ;) I'll try to remember to post it later tonight.

B. Scrambled eggs w/ canadian Bacon ,coffee
L. Chicken, roasted chickpeas w/ onions( I am addicted to these, sooo good)
S. fruit
D. I am going to make Core stuffed peppers
S. S/f ff pudding.

Melissa, I MUST have that recipe. I can spare a half point or so!

Breakfast: Banana

Lunch: Large mixed greens salad (Grilled chicken, cucumbers, tomato, shredded carrots, red onion, avocado, and FF honey dijon dressing)

Snack: FF cottage cheese and Del Monte Fruit Naturals peach cup drained

Dinner: Chipotle chicken burrito bowl with pinto beans, lettuce, tomato salsa, hot sauce, cheese (3 points), and 1/2 cup brown rice cooked in broth and added at home.

Vickie, one of these days I'm going to try to make one of those Chipotle bowls at home.

Niki, can you share your chickpea recipe?

I sure can, I usually make two cans at a time and I refrigerate them.

two cans of chick peas, rinsed very well & drained. I put them in a baking dish with one onion thinly sliced, add 2tsp olive oil, season to taste, I usually use adobo, paprika, onion powder, garlic powder & chili powder and if you like it spicy you can add red pepper flakes. I miss it well and bake for about 45 Minutes - 1hr on 425 I like them a little crispy.

d--ff pizza/lean burger

Not exactly Core...but I'm trying to want to try to get back on the wagon. Is that progress? :lol:

l: LO hamburger stroganoff (made with all low-fat ingredients)
s: popcorn (not the low-fat kind)
d: hamburger, oven fries, milk

Low on fruits & veggies today, aren't I? Tomorrow will be better...

Here's the other recipe:

Cheesy Chicken And Rice Bake
1 can (10 3/4 oz) 98% fat free Campbell's Cream of Chicken soup
1 1/3 cups of water
3/4 cup uncooked brown rice
1/2 tsp onion powder
1/4 tsp ground black pepper
1 1/2 lb skinless, boneless chicken breast halves (about 4-6)
1 cup fat free shredded cheddar cheese (4 oz)
1 cup frozen mixed vegetables, optional

Mix soup, water, rice, onion powder and black pepper in 2 qt. shallow baking dish.
Mix in frozen mixed vegetables, if desired.
Top with chicken. Sprinkle chicken with additional pepper.
Cover and bake at 375 degrees for 45 min. or until chicken is no longer pink and rice is done.
Uncover and sprinkle cheese over chicken. Let melt on chicken.

I did not add veggies and it was a little runny but really tasty. I think next time I might throw in some green beans or something. Also, I used very little cheese and really didn't think it added much. Next time I will probably just leave it out, especially since I don't like ff cheese. Maybe if you used a whole lot it would be really cheesy and good. I hope you all enjoy. Oh, and this is not my recipe, I think I got it from a site I've posted before.

Angela, I was thinking about you today and wondering how you were doing. I'm glad you're posting. I know that helps you.

Thanks for the recipe, Melissa. I will give it a try. I think I'd rather have my veggies on the side. I don't mind the FF cheese but I'm not sure that I'd like it on this dish.

well, chickies. i went to check on my m&m's for my popcorn. i bought them last week and was hoarding them. the other day i showed curtis where they were. mistake. i have no m&m's for tonight's popcorn feast. life goes on.

Me too, Angela! I know precisely what you mean!

This isn't going to be pretty, so hang on. In my defense though, I was trying to do points.

Breakfast: medium McDonald's Coke (3), 1 oz. swiss cheese (2)
Lunch: 2 slices SF WW bread (2), pimento cheese (2), Light Ruffles (1), 2 cups milk (4)
Snack: Dannon Light 'n Fit yogurt 4 oz. (1)
Dinner: grilled chicken breast (3), broccoli (0), milk (2)

Total is 20
