Snack Ideas
 
OK, I know that this is a lame question, and I should not have to ask it by this point in my core experience, but I'm stuck. Does anyone have any good ideas for core snacks that I could eat in class? It would have to be mess-free, utensil-free, and quiet. Honestly, the past couple of weeks I've eaten animal crackers and yogurt pretzels. Not exactly core!! So any ideas would be gladly accepted! All I can think of is baby carrots. :p

Core snacks! OMG, this is definitely a list that we all need PLUS something that new people and lurkers always ask.

Here are mine:
Popcorn (pop ahead of time and put in a ziplock bag)
Carrots
Apple slices (I get the ones that McDonald's puts in their Happy Meals)
Bananas, oranges, grapes
Celery dipped in FF sour cream mixed with salsa (it's good so stop yer gagging!)

You're really throwing a big wrench in the plans when you say "utensil-free"! :lol:

1 pt. snacks
WW carrot or chocolate snack cakes
7 Quaker rice cakes
light string cheese
Laughing Cow light cheese wedge
BabyBel cheese rounds

Thanks Kathy! Popcorn is a good one, I hadn't thought of that. I need something that I can munch on continuously throughout class to help me stay awake. :D And I know all of my qualifications make it difficult! :)

What about some baked oatmal bars or a WW smoothie. I have seen the smoothies in the WW mag, but we do not have them yet in my area. Those are supposed to be on core and you could just drink it.

Edamame. SO good. You can buy them frozen in lots of large supermarkets now. I get mine at Trader Joe's. They are already cooked so you could let them thaw and they'd be ready to eat when you are ready for them. And....they're veggies but don't taste like them!

I have never tried edamame. Unfortunately we don't have a Trader Joe's, but I'm sure I could find some.

I just thought of roasted chickpeas. They are better straight from the oven, but I bet they would be good later too.

You can also make those microwaved cheese crackers (or do them in the oven) ... or thinly sliced potatoes sprayed with Pam and baked. Sort of like your own potato chips. I've made them and they're really good.

Do you just spray them with Pam, sprinkle with seasoning, and put them in the oven? Sounds good, it never occurred to me!

Yes, I made it with both white and sweet potatoes. Slice very thinly and keep an eye on them. I can't remember how long it takes.

The cheese works best with regular full-fat cheese but I think it can also be done with FF.

I have some ranch and nacho seasoning that I bought for popcorn that would probably make some very tasty chips! Thanks Kathy.

Here's another recipe:

1 unpeeled baking potato (weighing about 1/2 pound)
2 T fat-free Italian Dressing (bottled)
salt if desired

Directions:
Preheat oven to 500 degrees. Lightly spray a cookie sheet with vegetable cooking spray.

Slice the potato into thin slices. Put the slices in a bowl, add the dressing, and toss until evenly coated. Arrange slices in a single layer on the cookie sheet.

Bake about 10 minutes on one side, turn each slice over and bake about 10 minutes more. Potato chips should be lightly browned on both sides. Watch carefully, removing slices as they brown and placing them on a large sheet of aluminum foil to cool. Salt immediately after removing from oven if desired.

My Niece and I made the cheese chips with FF cheese. The recipe is on our board but I think it's in the old recipe thread before Angela split them all out for us. They tasted pretty darn good.

All Bran Bar. 2 points
Banana
Dill Pickles
Boiled Eggs Would have to keep in a insulted lunch bag though.
WW 1 point bars
Cauliflower
Broccli
Cucumber strips
That is about all I can think of right now.

I've been enjoying hard boiled egg whites filled with hummus and topped with sliced green olives. I also love celery stuffed with a wedge of 1 pt. laughing cow light.
