  • Sorry, couldn't think of anything clever or remotely clever

    Breakfast: Oatmeal made with skim, splenda, and 1/2 cup homemade chunky oatmeal cooked in

    Lunch: Soft boiled eggs and multi-grain toast with smart balance (points)

    Dinner: Panera FF turkey sandwhich on a french baguette with mustard, tomato, and red onion

    Snack: Core popcorn with the Niece and Uncle Jim

    Breakfast: 2 eggs and canadian bacon
    Lunch: Core Baked Ziti (just made it and it is good!!)
    Snack: Banana or apple
    Dinner: Core Baked Ziti again and salad (why not eat it again)
    Snack: If needed - popcorn

    Oatmeal (2 servings) with splenda brown sugar and 1/4 cup skim milk
    1 oz canadain bacon
    2 clemetines
    4 potato chips. That is why I am on here.
    Not sure what else I will have today. So will post that later.
    Heres for the rest of the day.

    Celery with 2 tablespoon peanut butter
    1 cup baby butter beans
    Taco chicken
    Bowl of left over Vegetable Picadillo

    So I think this is pretty well core. I know the chips and peanut butter isnt. But otherwise. Did I do alright.
  • Here is the Baked Ziti recipe.

    8oz whole wheat pasta
    2tsp. olive oil
    3 garlic cloves chopped
    1/2 to 1 cup of chopped onion
    1 28oz can crushed tomotoes with Italian herbs
    2 chopped zucchini
    basil, oregano, parsley
    1 cup ff cottage cheese or ff ricota
    1 beaten egg
    dried parsley

    Saute garlic, onions in oil until tender. Add tomatoes and additional watter to thin. Add chopped zucchini and spices. Simmer till tender.

    Cook pasta. Make cottage cheese mixture - ff cottage cheese, egg, and parsley. When pasta is done, add to casserole pan sprayed with cooking spray. Cover with cottage cheese mixture, and then with sauce mixture. Bake at 350 degrees for 45 minutes.

    I just ate this for lunch. It is very filling. Not really liked baked ziti but a good way to get your veggies down.
