Breakfast: maltomeal, skim milk Snack: 1/2 grapefruit Lunch: krab salad with celery, onion, and FFMW, wrapped in a few lettuce leaves; light string cheese (1 pt) and carrot sticks Snack: popcorn Dinner: small salad with FF 1000 Island dressing, pizza made with WhWh tortillas, FF mozzarella, diced tomatoes, purple onion, black olives, bell pepper (I think the tortilla is 1 pt but will need to figure it tomorrow), and milk |

Oh my...you must try it!!!! SO GOOD. One of my favorite core recipes. Vickie has a really great recipe posted, but I'm very lazy and don't go through all of the steps that she does. I'm sure her way is better, but I'll summarize what I do. Take chicken tenders (or cut up chicken breasts) and dredge them in cornmeal seasoned however you like (I use seasoned salt most of the time). Then pan-fry in olive oil. It takes a little while to brown well (the first time I made them I moved them around too much so they didn't get very crispy but were good anyway) but just let them cook awhile on each side. It is an excellent way to eat chicken, and is almost like eating out.

Two questions:
Are wasa crackers core? I keep forgetting to look them up. Is the crustless pumpkin pie recipe posted? I searched for it one day but maybe I just overlooked it. |
Melissa, I couldn't find the recipe either this morning. It's truly wonderful. I'm enjoying it so much that I might make another one soon. It's SO easy. I even use it for snacks during the day. It's a veggie and a milk for goodness sakes! Here's the link, GF.

Thanks Vickie! You are so helpful as usual!! I didn't think the wasa crackers were core, like you I'm sure I would have eaten them by now. But I think they are really low in points.

2 Clemetines Oatmeal (2 servings) with skim milk and Splenda Brown sugar 2 Clemetines 1 stalk celery with 1 tablespoon peanut butter 1 cup ff cottage cheese Pack WW fruites Banana Cup celery sticks 2 thin slices canadian bacon 2 boiled eggs 2 clemetines. |
