i have to tell you about this.

  • we decided to have burgers tonight. everyone but me had bread (of course). but i have to tell you what i had. i made 2 polenta cakes on the griddle. i used my spatula to mash them fairly flat. they worked beautifully for bread!

    i'm definitely doing this more often.

  • My Niece made a fabulous polenta pudding with blueberry compote on top. I put the recipe on our board. I wish she'd make it for me again!
  • that sounds good, vickie. here's how i make mine.

    3 cups boiling water
    1 cup cornmeal
    5 dashes cayenne pepper
    about 1 or 2 teaspoons splenda
    salt to taste
    about 1 or 2 teaspoons butter buds

    i combine everything in the boiling water. then i let it rest just a few minutes. then i drop it by big tablespoonfuls onto a hot (400*) griddle that's been sprayed with butter flavored pam. a skillet would work. i spray the spatula with the butter flavored pam, too. i use the spatula to flatten the cakes. i griddle them a long time on each side. i also lightly salt them on both sides, too. i flatten them more than once till i get them the thickness i want.

    i like them. and they did work for the burgers. they were goooooood!!! (i could hardly believe it.)
  • I am going to buy more cornmeal (I'm almost out) and try this! But what are butter buds? I don't think we have this in Canada and are they essential to the recipe?

  • Butter Buds are like Molly McButter, if you have that. If not, I'll describe it. It's a fat-free powdery yellow substance that when sprinkled on hot, moist food, melts on it and tastes like you buttered your food. I use it on vegetables and potatoes sometimes. My kids like it better than regular margarine, because it's fun and it sprinkles.

  • thank you for explaining, angela. i just now got online. i use butter buds all the time. i find it at the grocers at the bottom of the spices. molly mcbutter is down there,too.
  • OMG Sandra! You found a way to eat burgers like "normal" people!

    So, if I had my 96% lean burger, and my polenta bun, with my soy cheddar cheese and tomatoes, pickle, ketchup, mustard, onion -- it would be a real cheeseburger.

    I'm so happy!!! I may just make one of these tonight.
