Core Cornbread
 
Ok ladies. I have in the oven as we speak a pan of Core Cornbread. I got the recipe off the cornmeal package. It has eggs, milk, cornmeal, baking powder, salt and 3 T oil (I used Safflower). Spread out over the entire large pan (16 2-inch squares) that should be within the 2t a day allowed. The only baking powder I had expired in 2003 but hey, it might work! If this is core, and yall tell me what you think, can Core Dressing be far behind? :eek:

Janette let us know how it comes out, corn bread is one of my favorites. I could eat it everyday. Do you know if corn mush, like a hot cereal is considered core? I would like to have a nice hot bowl of it instead of oatmeal coming up on the cold winter mornings. Thanks Julie

The cornbread turned out pretty good. I would fix it again. Even DH liked it and he is particular. I could imagine eating it with soup this winter.
Julie, I'm not sure what corn mush is but if it doesn't have any processed foods like flour in it, it probably would be.

If you're making the corn meal mush with just water, yes it's core. It's basically polenta before it's stiffened up. I've never tried it, but my sister loves it...of course she adds syrup into so that's bound to help. Do you add anything in yours?

yes cornmeal is Core

and about that cornbread... could I just add some splenda to make it sweeter? I love sweet cornbread!

The recipe I use, has no oil at all..I use applesauce instead. I have been experimenting with it to get a lighter texture....without flour it is a little dense, and I DO use Splenda

Hey just an added thought - add corn to the cornbread or jalepano peppers . . . . Can't make any now since I have no stove :( :( :( No boiled eggs :( :( :( Can't wait to get my kitchen remodeling project done so I can cook again. I do have a microwave, but that won't do for those two items.

Nate, you are right about the dense part. I didn't think about applesauce. I will try it next time. I just counted the oil as my 2tsp. a day. Even though it was dense, it was wonderful to eat a nice slice and not have to count it! I like sweet cornbreax too so maybe I will add some splenda.

I tried the banana ice cream and it came out hard and icy. What did I do wrong?

And you know what else? If we could somehow get chicken broth to be core, we could make that cornbread dressing! Cornbread, broth, raw eggs, chopped celery and onions, maybe some chopped boiled eggs ... sounds like dressing to me!

Why wouldn't chicken broth be Core if you boiled the chicken yourself and chilled it and removed the fat? Works for me!

Cornmeal is core, cornbread IS NOT CORE - NO BREAD!!! Use flex points.
