Soy cheese question
Do any of you use soy cheese? I'm a little worried about buying it and wasting it because I don't like it. I'm especially interested in using it on pizza because I can't find ff mozarella. Let me know if you like it or not. I would love an honest opinion :)

I've used the soy cheeses in casseroles and they have been great....much better than the FF cheeses. I can't remember the name of the brand that I used but I found it in the fresh produce aisle near all of the organic products. They used to have a blend that was mozzarella, parmesan, and romano and it was outstanding. Now they just have cheddar or mozzarella. I wouldn't eat it plain out of the package (nor would I eat FF this way) but as I said it was great mixed with other things. Even in a cold salad it would be good.

I do think it would be good on pizza if you spice it up. It melted a lot better than FF. I'm not sure I'd leave it in the whole time to bake. Maybe bake the crust and sauce/toppings and put the cheese on for the last 15 minutes or so.

I see they still carry the blend I was talking about. It's awesome! I used it in my pizza casserole recipe (on our board) and my lasagna recipe (also on our board). |

I think I will have to try them as well. I know I have seen veggie shreds at my store, but I think they only had cheddar. I will try them though. Thanks!

I use the sliced American cheese of that brand. It's good on sandwiches, and melts better than ff. However, i did try a piece by itself, and it had that earthy taste to it. It was def. better than a slice of ff cheese by itself though.. :) We bought the shredded to use in casseroles and on pasta. Glad to know it's good!
Sloan - I'm in the nashville area too, and can only find ff kraft shredded cheddar. Soo disappointing!! |
amybmid-you're right, it is disappointing. I don't really like the taste of kraft ff cheddar, especially by itself :(

Thanks for this thread - I am actually on South Beach, but having big problems with lactose so I need a dairy free cheese. I will look for this brand - thanks!

I didn't look up the ingredients for all the products, but the Veggie Shreds has "casein (a dried skim milk protein)," and "enzyme-modified cheese flavor (cultured milk, salt, enzymes, calcium chloride), and at the end says "Allergy Alert: Contains milk and soy ingredients. May contain trace amounts of lactose."
They do have some vegan / casein-free products, in a blue package instead of green. |
Hmm, that's interesting. On the first page of their website though they say "lactose free" as part of a list of "veggie slices address key health benefits". I guess I will just have to give it a try.
