Barb, do you like eggs? I like to have protein for breakfast more than not. I'll do boiled eggs or make a quiche (take container of ff cottage cheese, add in a small container of egg beaters then add drained spinach, bake 350 for 30-45 minutes). During the week I take my bfast with me to work. Also, oatmeal, shredded wheat, puffed rice/wheat are all core. Try core muffins - there are a few receipes here for those. HTH

For breakfast, I usually take it to work and eat it there as I can't eat as soon as I get out of bed. I have to wait awhile. So I either bring shredded wheat with ff milk and top it with fresh strawberries or raspberries and a little bit of splenda. Another thing I absolutely love are the cottage cheese oatmeal pancakes. They might not sound very good, but they taste just like the real thing. My family eats them and doesn't have a clue what they are made of. They think they are regular old pancakes. I add fresh blueberries to the batter also. But I make 3-4 batches of these every other weekend or so, freeze about 2 per bag and bring these to work and top them with either fresh fruit or the core apple butter. Once in awhile I use sugar free syrup, but it's not core so I don't use it often.
Another thing I make ahead of time is the hashbrown crust quiche. I think it's in the recipes. If not, let me know and I will add it. It's awesome. If I make this on the weekend, I usually have some leftover to bring to work. On the weekends I usually have an egg mcmuffin(one that I make w/ff cheese and a 1 point english muffin, canadian bacon, and an egg fried in pam). Just try the different recipes. Some you will love, others you might not. But it keeps it from getting old fast. Plus, if you find core recipes you like, you don't have to use your points on them. You can save them for other things.


Paula, putting the buffalo chicken burger on a salad sounds awesome. I have 2 left over. I might have to try that tomorrow for lunch, although I have had salads 2 days in a row with chicken that was grilled over the campfire. It is awesome too! Has that nice smoked flavor.

Vickie, I've got about 7 glasses of water in me so far today so it better push that fiber!!!:D


Sandra, great to have you back! Are you glad to be home? It's always fun to go away but then it's nice to get back home too!

BB, I think your recipe is core if there is no fat added to the o'brien potatos. Go for it!

Sloan.....WOO HOO and huge congratulations to you on your outstanding loss this week! That's how it'd go for me. I'd stay the same or gain a small amount and then the next week I'd lose big. You just have to stick with it.

Now....to follow my own advice.

Barb, I eat shredded wheat and fruit or oatmeal and fruit almost every morning for breakfast. I have tried the oatmeal and cottage cheese pancake that I believe is on our board. It sounds icky but it's awesome with some SF Smuckers syrup. I also love the muffins. The two I make most often are the banana walnut....or nut muffin and the new cornmeal blueberry ones that someone.....maybe Paula....just posted recently. They are really, really good. They stick with me and satisfy my sweet craving. Actually, I'll be making some today in a little while.

I'm off to make some Core Chicken Fried rice right now. Yum. We haven't had it in a long time.

Tracie....how funny we were both posting about the cottage cheese pancake at the same time. And, saying it doesn't sound good but it is. I've never made more than one huge one at a time. I'll have to give your way a try.

I forgot about muffins. I made a certain kind of muffin that I loved, and can't seem to remember what they are called and where I found them. they have crushed pineapple in them. But I love them. Anyone ever made muffins with pineapple in them?

I usually make about 4 pancakes to a batch. But if you make a number of batches up, you still have to blend them batch by batch. Unless you have a really good blender or a vita mix or something powerful, it doesn't blend more than one batch very well. I've already tried doing 2 batches at once and it didn't work very well. But I make a batch and put it in a 4 cup measuring cup with a pourer, than make another and add it to the 4 cup measuring cup. I can just take them from the freezer in the morning and heat them up at work. Works wonderful and they are so good and so filling.

Sloan, Congrats on the 2.8!!!! Way to Go!!! For the pancakes, you could make a warm berry sauce --- put some berries in a sauce pan with some splenda and let them cook a bit.

Had a good day today. DD went swimming at her friends, I ran my errands, got in two walks. Cooked grilled chicken, grilled potatoes and greenbeans for dinner. Got the beans and potatos fresh from the farmers market. DD is now in the shower then its my turn. Way too hot and sticky today.

Off to log my dinner.
