Resistant Starch
Has anyone heard of this? It's supposed to be great for losing weight, as well as many other health benefits.

Interesting! Did you see the reader's comment that said the article read like a pamphlet from the potato association? :rofl: I think I would research this a little more. Since the foods mentioned are all core, we are already at an advantage. The main point was that the foods were better cold.

I have a really good recipe that I found for Black bean and Corn Salad. All you do is drain the beans and corn, add celery and onion to taste, and toss with ff balsamic vinaigrette. It is served cold and is very tasty.

How interesting! Back in my college days, when I was low on money, I would just buy a big sack of those small russet potatoes, and then bake them up, wrap 'em in foil, and stick 'em in the fridge. I'd grab 2 or 3 to snack on at school. I'd bring a small shaker of salt, then just peel back the foil, sprinkle a little salt and eat them up. People thought I was weird but they were so good and filling. Now I know why!
I think I'll focus on adding room temperature or cold black beans to my salads. Because they are also an awesome source of magnesium, which I hear is something a lot of people are deficient in. |
