cole slaw recipe

Does anyone have a good coleslaw recipe? I made my regular recipe and substituted ff mayo, and it was yukky! I like the creamy style best, but would try any type that you all think is yummy. Thanks!!

twestra 06-20-2008 12:06 PM

I would also like one! I don't know how to make it without may, which means using ff.

Vickie 06-20-2008 12:27 PM

Sloan, I have two recipes. I think they are both listed here. One I've made all my life; it's sweet and sour. The other is Core KFC coleslaw. It uses FF mayo or miracle whip with some other stuff. I never tried it but I want to. I'll go look for them.

Scroll down to Vickie's Family Sweet and Sour Coleslaw. It's yummy and helps you get your oil for the day in.

I couldn't find the KFC coleslaw recipe on our board. I must not have posted it. Here's what I found. The lowfat buttermilk isn't Core. I'm giving you the recipe and I'm off to figure out how many points it would cost us. Is there such a thing as FF buttermilk? Is it Core? Hmmmmm.....where's my book?

"KFC" Coleslaw

8 servings 0 points each

1/2 cup Splenda
1/2 tsp salt
1/8 tsp pepper
1/4 cup skim milk
1/4 cup low-fat buttermilk
1/2 cup fat-free mayonnaise
4 tsp rice wine vinegar
2 tbsp lemon juice
8 cup package coleslaw mix

Combine all ingredients and allow to rest in refrigerator at least an hour or two before serving.

The CFC lists 1 cup of lowfat (1%) buttermilk or reduced fat (2%) buttermilk as NOT Core....no surprise...and 2 points.

FF milk is Core. So I suppose if there was such a thing as FF buttermilk, it would be Core.

I'd use the 1% buttermilk if I couldn't find FF buttermilk. That would mean that there would be .5 points for the whole recipe. If I ate the whole thing, I'd probably count the 1/2 point. If not, I'd probably count nothing.

Of course, that may explain why I have 140 pounds to lose.

twestra 06-20-2008 01:19 PM

I wouldn't count anything if I only ate some of it. Even if you ate 1/2 of it, it would only be 1/4 point, and that's not worth counting.

I don't know how it would affect taste, but my mom makes buttermilk with regular milk and lemon juice if she is out of buttermilk. I wonder if you used a total of 1/2 cup of ff milk and added the lemon juice to it (and allowed it to sour) if that would work. Then the low fat buttermilk would not be an issue at all.

Apparently, you can!

HI LADIES ~ coleslaw is my favorite salad so I have a few recipes for you. I either buy the bag of prepared salad or make my own and vary the recipe with finely shredded or diced cabbage (red and/or green), carrots, red or white onions, and sometimes add diced radishes or green onions from my garden. Occasionally add celery, cukes, or apples for variation.

#1) is so easy ... I just add LITE CEASAR DRESSING (any brand) to the slaw, if I need more dressing, I just add a bit of low-fat sour cream.

#2) to slaw of choice, I add a bit of low-fat Miracle Whip or similar dressing with a dash of vinegar and 1 tsp celery salt. Tip: sometimes, I just use 'regular' Miracle Whip with half low-fat sour cream.

#3) this recipe came form a friend: to slaw add a couple of tablespoons of olive oil and about one tbl SEASON ALL spice mix; if you can't find Season All, then use SEASONED SALT. Toss well, and let sit at room temperature to blend in flavors, before serving. *Note: you can use any kind of oil you like in this dressing; what's nice is olive oil doesn't go bad.

All these recipes are simple and quick and delish. Enjoy! :hug:ROSEBUD:hug:

Thanks y'all

Vickie 06-21-2008 09:25 AM

Sloan, I'd only "sour" 1/4 cup of the milk since it only calls for 1/4 buttermilk. I'd use the other 1/4 as skim. Make sense?

sloanie 06-21-2008 10:17 AM

Thanks Vickie, I think I'm gonna make it today. I'll let you know how it turns out

sloanie 06-21-2008 02:03 PM

Vickie-I made the slaw and did as you suggested. I haven't let it rest yet, but I tasted it, and it does taste like KFC's slaw!
